Lemon juice does magical things in baking, and you get a burst of fresh citrus in every bite. Lemon juice can also do the following things for your health (via popsugar.com):

  • prevent kidney stones
  • aid with weight loss
  • soothe a sore throat
  • stimulate your digestive tract and aid with digestion
  • stop an itch by rubbing lemon juice onto the designated area
  • has anti-cancer properties
  • balances pH
  • can bring down a fever

The cookies are lightly sweetened with maple syrup to balance the tangy lemon flavor, but if you crave something sweeter, you can always add more.

When working with the dough, it will be cake-like. That’s expected when working with a coconut flour base. The best way to form them into cookies for baking is to divide the batter and roll it into 15 balls. Then flatten each ball with the palm of your hand or bottom of a glass.

Keep the cookies in an air-tight container in the refrigerator to maintain optimal freshness.

These soft and chewy cookies are lightly sweetened with maple syrup and ready in less than 30 minutes.
