Watermelon Feta Salad

Dear Reader: These are extraordinary times we’re living in, and while we’ve always got an eye toward health and wellness, sometimes self-care and wellness looks a little different. As our needs shift, self-care might look like an over-the-top carpet picnic in the living room, or sweet treats that aren’t normally a part of your diet. We believe that sometimes it’s OK to forego the status quo, and that’s why the Pandemic Pantry series includes some “yummy but maybe not for every day” recipes for you to try. Enjoy!

The watermelon and cucumber flavor combination has to be one of the most classic of all time. Add a little mint, a nice sharp-tasting cheese like feta, some red onion, and toss with an easy-breezy vinaigrette, and you’ve got yourself a smash hit at any backyard BBQ.

Magical Modifications

It’s the perfect summer side to compliment seafood, chicken, steak, or even a burger! In fact, this isn’t just the perfect side, it’s an ideal canvas for so many yummy ideas to come to life. What about turning this into a salsa? Ole! The sharp, salty, crumbliness of feta is lovely for many people, but if it’s not your cup of tea, fans of this salad report that mozzarella balls or goat cheese are both fantastic options. The bite of red onion is half the fun of them, but if it’s too much for you, soak them in water for about 15 minutes. Our test kitchen experts report that it helps a lot. If you’re not really into mint, basil is a perfect alternative. Many fans of this salad love to add kalamata olives and balsamic vinegar for a little Mediterranean flair. Others prefer to dial down the Mediterranean influence by removing the cucumbers. Have you ever had grilled watermelon? That’s right, grilled. It’s divine, and a wonderful addition to the preparation of this salad. Candied pecans, grilled shrimp, oh my! There are so many ways to dress this up.

Wonderful Watermelons

Watermelons are mostly water… that’s probably why it’s so refreshing on a hot day! But did you know it’s also loaded with nutrients? It has loads of vitamins A, B6 and C, plus lots of lycopene, antioxidants and amino acids too. There’s even a little bit of potassium for good measure. Plus it’s fat-free, very low in sodium, and has just 40 calories per cup. What’s not to love?

The lycopene is of particular interest to dieticians and scientists alike. Lycopene is known as a “phytonutrient”, a naturally occurring compound in fruits and vegetables, and the human body loves it! Lycopene is said to have positive effects on heart and bone health. It is also a powerful antioxidant, offering anti-inflammatory effects. Lycopene is what gives watermelons, tomatoes, red grapefruits and guavas their color. Ready to get some lycopene in your belly? Let’s get cooking!
