S’Mores Bars – Copycat Starbucks S’mores Bars Recipe

Dear Reader: These are extraordinary times we’re living in, and while we’ve always got an eye toward health and wellness, sometimes it’s not just about calories and fat grams. Self-care might look like an over-the-top carpet picnic in the living room, or sweet treats that aren’t normally a part of your diet. We believe that sometimes it’s OK to forego the status quo, and that’s why the Pandemic Pantry series includes some “yummy but maybe not for every day” recipes for you to try. Enjoy!

Ah, s’mores. Practically synonymous with camp fires and kumbaya. But this sticky, gooey, yummy combo of chocolate, marshmallow and graham cracker really deserves way more exposure than just off the beaten path. Thankfully there are others who agree, so we may now present you with – drum roll please – S’MORES BARS, made fresh right in your own home! Not a part of the equation: bug bites, instant coffee and a stiff back. You are so welcome.

Ingredients

  • 2 Cups graham cracker crumbs
  • 8-12  Tablespoons  butter (melted)
  • 1/2 Cup powdered sugar
  • 4 Hershey Chocolate Bar (use 4.4 ounce bars)
  • 1 package mini marshmallows

Instructions

  1. Preheat oven to 350 degrees
  2. Grease 9×13 pan with non-stick butter spray
  3. In a medium size bowl mix the graham cracker crumbs, powdered sugar and butter with a spoon. Note: When adding the melted butter to the crust, you may find that there is too much butter and the mixture is too soupy. The trick is to slowly add the butter, mixing it in a little at a time until the mixture is damp but not wet or dry. It should hold its shape when pressed between your fingers
  4. Press the mixture into the bottom and sides of the pan.
  5. Place in oven and bake for approx. 5-8 minutes (just until sides become slightly golden brown)
  6. Remove from the oven and let cool.
  7. Lay the Hershey bars on the graham cracker crust- covering the bottom of the pan completely.
  8. Place in the oven for approx. 3 minutes (until chocolate just becomes shiny and begins to melt)
  9. Let this cool for 1-2 min.
  10. Place marshmallows on top of the chocolate. Pack them closely next to each other.
  11. Turn the oven to “broil” – put the pan in and watch closely! They’ll only need about 2 minutes. As soon as they begin to brown, take them out of the oven.
  12. Let them cool completely… finish cooling them in the refrigerator to make them easier to cut.
  13. Enjoy!
