Salads in jars are currently in vogue and for good reason. Who simply doesn’t enjoy a fresh salad that’s ready to serve in an instant?
To celebrate this interesting trend, I’ve decided to adapt some popular recipe to the standards of a healthy holistic diet.
You’ll only need one piece of hardware to carry these salads: a one-quart wide-mouthed Mason jar.
Mexican Seafood Salad
I love this recipe because it adapts one of Mexico’s best culinary dishes into a healthy and portable salad jar alternative. If you have not had fish tacos, I recommend you try one as soon as possible.
But on to the really good stuff: this salad packs a serious amount of omega-3s, protein, and fiber to satisfy most of your dietary needs. It’s also delicious.
Here’s what you’ll need:
– 1 tablespoon of this vegan sour cream
– ½ a teaspoon of freshly ground pepper
– ½ a teaspoon of pink Himalayan salt (mix with the pepper)
– ¼ a cup of organic canned black beans (make sure they’re drained and rinsed)
– ¼ cup of sweet corn kernels
– 2 cups of shredded organic romaine lettuce
– ½ a cup of chopped tomatoes (I recommend organic roma or heirloom)
– 2 tablespoons of organic pico de gallo
– 2 tablespoons of organic cheddar cheese
– Around 2.7 ounces of tuna
Note: when you buy tuna, make sure your selected brand catches tuna by “troll or by pole” and is not packed in any soy based liquid.
Here’s what you need to do:
In a large bowl, place and mix your Himalayan salt, pepper, sour cream, and pico de gallo. Once you have a relatively uniform mix, add the black beans, corn, and tuna. Make sure everything is evenly coated.
Now get your mason jar ready. Layer the lettuce, cheese, tomatoes, and the tuna mix. Seal and refrigerate.
When you’re ready to eat, simply shake and serve in a bowl.
Chicken Protein Salad
Besides its delicious taste, this salad packs enough proteins to help you power through your afternoon and enough fiber to help your digestive system running at an optimal level.
The key to making to helping your salad reach its full potential is to always use quality organic ingredients and non-GMO fruits and vegetables.
Ok, let’s start!
Here’s what you’ll need:
– 4 ounces of organic chicken breast (make sure you cut it into small chunks)
– 2 strips of cooked chopped organic bacon
– ½ a cup of chopped cucumber
– ½ a cup of cherry tomatoes (chopped in half)
– ½ a cup of organic apple cut into small chunks
– 3 cups of chopped organic green leaf lettuce
– 1 teaspoon of lemon juice
– 4 tablespoons of this amazing herb garlic vinaigrette
Here’s what you’ll need to do:
Begin by lightly coating your apple chunks with the lemon juice. I recommend doing this in a separate bowl.
Ok time to pack this salad! In your mason jar start placing the cucumbers, tomatoes, and lettuce. One tip is to sprinkle a bit of the dressing between each layer.
The top of your salad jar should have your chicken, bacon, and apple.
Close and seal the jar until you’re about to head out for lunch.
To serve, simply shake your salad jar and pour your salad onto your plate or bowl of choice.
