Mom’s Impossible Cheeseburger Pie

Dear Reader: These are extraordinary times we’re living in, and while we’ve always got an eye toward health and wellness, sometimes it’s not just about calories and fat grams. Self-care might look like an over-the-top carpet picnic in the living room, or sweet treats that aren’t normally a part of your diet. We believe that sometimes it’s OK to forego the status quo, and that’s why the Pandemic Pantry series includes some “yummy but maybe not for every day” recipes for you to try. Enjoy!

I don’t know about you, but I feel like just about any recipe that calls for Bisquick is probably going to be a winner. Especially in the comfort food arena, biscuits are king. Anything involving this magical baking material is inevitably so easy to make, too! Nothing but a one-pot concoction of piping hot good-for-the-soul ingredients, always topped off with yummy, fluffy, flaky carbs.

If you’re nodding your head in agreement right now, then you’re definitely going to really love this recipe! It’s good old-fashioned cheeseburger pie, just like you probably remember from your childhood. There are many different ways to make it, and you’ve no doubt tried quite a few of them over the years. But this one is loaded with some great flavors, a lot of yummy cheddar cheese too, and it’s got that jaunty Bisquick cap that we so love. We’ve checked thoroughly, and this one’s the best. Try this recipe for your next big Netflix marathon! It’s hearty, filling, and so easy to make that you’ll never miss even one second of your latest favorite series.

Ingredients:

  • 1 lb. lean ground beef
  • 1 large onion (chopped)
  • 1/2 teaspoon of seasoned salt
  • 1/2 teaspoon of garlic powder
  • a dash or Worcester sauce
  • 1 cup of shredded cheddar cheese (I used 3/4 cheddar and 1/4 mozzarella)
  • 1 cup of milk
  • 1/2 cup of Original Bisquick mix
  • 2 eggs

Instructions:

  1. Heat oven to 400°F.
  2. Spray a 9 inch pie plate with non-stick cooking spray
  3. Cook beef and chopped onion in a skillet over medium about 10 minutes or until beef is brown. Drain excess fat.
  4. Stir in salt, garlic powder and worcester sauce and then spread in pie plate
  5. Next, sprinkle the shredded cheese on top of the beef
  6. In a small bowl, whisk together the milk, eggs and Bisquick. Make sure you try to get as many lumps out as you can. Pour over the meat mixture.
  7. Bake in oven for 25 minutes or until a knife comes out clean
  8. Enjoy!
