Dear Reader: These are extraordinary times we’re living in, and while we always have a view toward health and wellness, sometimes the concept of self-care and wellness becomes a little different. As our needs shift, self-care might look like an over-the-top blanket fort in the living room… or decadent treats that aren’t normally a part of your diet. We believe that sometimes it’s OK to forego the usual self-care routine. That’s why the Pandemic Pantry series includes some “yummy but maybe not for every day” recipes for you to try. Enjoy!
I know it probably seems like you’ve tried every potato recipe under the sun, but here’s one that might be very new to you!
If you’re like most people, the unassuming potato is probably a staple in your home. Which is actually great, because potatoes are as versatile as they are healthy. They can boost your immune, lower blood pressure and cholesterol, improve digestion and so much more. Not to mention, they’re low in calories too. One average-sized potato has around 110 calories.
Rich in vitamins and nutrients like vitamin C, B6, zinc, vitamin E and potassium too, they are that “stick to your ribs” kind of veggie that can be so helpful with your weight goals.
They are high in antioxidants which is great for helping fight aging naturally, from the inside out. The antioxidants can help lower this risk of chronic disease in addition to keeping you bright-eyed and bushy-tailed.
Unassuming though they may be, they can really pack a wallop of flavor too. Check out this recipe for melting potatoes! The delicious, savory flavor goes with almost anything you can imagine from a lovely cut of steak to a poached salmon filet. If you are a vegetarian, use vegetable stock and make these melting potatoes the base for something really special. Perhaps a nice grilled portobello mushroom steak, or other roasted veggies like carrots, turnips, asparagus, and onions. With this easy and versatile recipe, the sky is the limit on modifications you could make. The comfort food factor knows no bounds, however. Give these potatoes a try, and we know you’ll agree.
