Ingredients:
– 10 delicious dates
– A rather large teaspoon of cocoa powder
– Dried coconut shreds, which is optional depending how you feel
– Raw cashews, which are also optional
– Gather 1 cup of raw pecans
– And some nice Goji berries, which once again are optional
Once you gathered you ingredients you can continue on to the actual cooking part of this process. Here are the directions that will give you the best energy balls you’ve ever tasted!
Directions:
1. The first step is to soak your delicious dates. Try to do this with room temperature water roughly an hour before you do anything else. If you find that you are short on time you can place your dates in hot water. The goal is to soften the dates to be able to give them a paste like texture.
2. Measure one cup of raw pecans and place them in a food processor. If you have digestive problems you should soak the nuts and dry them with a towel afterwards.
3. Use the food processor, or blender, to process the pecans by using a pulse setting to get them nice and ground. Make sure you don’t ground them up too much; you want nicely ground pecans, nothing that resembles butter.
4. Then you are going to go ahead and add a hefty teaspoon of beautiful cocoa powder. However, if you are not a chocolate lover you can skip this step.
5. Once you’ve added the cocoa powder you must then pulse the mixture again to combine the pecans and cocoa.
6. Then add six soaked and crushed dates to your mixture. Add a little bit of water to to create the proper texture. Creating this texture is very important to the process. To get the best water to date ratio pull them out of the water and mush them lightly with your fingers. Then add the slightly wet, and mushed, dates to your pecan and cocoa mixture.
7. Once again pulse this mixture using your food processor, or blender, until the dates and pecans become one texture. The goal is to get the texture to a point where you can pinch off chunks of the mixture to role up into bite-size balls. You can always add a few more mushed up dates if you’re not happy with the portions. But be careful you don’t add to many dates or you texture will suffer and it will not mesh well with the nuts.
8. The last step is to role the bite-sized balls into cocoa powder or dried coconut to give them even more flavor. You can finish them off by adding raw nuts or berries on top of each individual ball.
