Dear Reader: These are extraordinary times we’re living in, and while we always have a view toward health and wellness, sometimes the concept of self-care and wellness becomes a little different. As our needs shift, self-care might look like an over-the-top blanket fort in the living room… or decadent treats that aren’t normally a part of your diet. We believe that sometimes it’s OK to forego the usual self-care routine. That’s why the Pandemic Pantry series includes some “yummy but maybe not for every day” recipes for you to try. Enjoy!
It’s way too hard to resist these incredible (and easy) vegan smores bars! The classic combination of chocolate, graham cracker and marshmallow gets a vegan facelift in this delicious dessert that’s so yummy you’re not going to want to share with anyone else.
Vegan Marshmallows, Chocolate & Graham Crackers
For the vegan marshmallows try Dandies Non-GMO Marshmallows, or Smashmallow which offers different flavors. Think strawberries and cream, neapolitan, mint chocolate chip, and even cinnamon churro.
For vegan-friendly chocolate, Lilly’s chocolate chips are a great option. You can use any non-dairy chocolate though… bars, chips, whatever you have.
Nabisco’s Original Grahamsare well-loved by vegans everywhere, and Keebler also makes a good one.
