Easy 7-Up Cake

Dear Reader: These are extraordinary times we’re living in, and while we always have a view toward health and wellness, sometimes the concept of self-care and wellness becomes a little different. As our needs shift, self-care might look like an over-the-top blanket fort in the living room… or decadent treats that aren’t normally a part of your diet. We believe that sometimes it’s OK to forego the usual self-care routine. That’s why the Pandemic Pantry series includes some “yummy but maybe not for every day” recipes for you to try. Enjoy!

Have you ever tried 7-Up cake? If I’m being honest, though I am a child of the 70s, I didn’t even know such a thing existed until recently. Turns out it’s a vintage recipe from that exact era, and there’s a whole lot more where 7-Up cake comes from. Back in the early 1950s, the 7-Up company actually created a booklet full of recipe ideas. Included in it was another gem that may spark holiday memories for certain people: the one and only 7-Up salad. With its green gelatin base, it was jiggly and festive enough to brighten any office holiday party. And it no doubt most certainly did. Ah, the 70s. (1)

The folks at 7-Up have certainly come a long way since their recipe booklet from the 50s. Their website is sleek and boasts numerous recipes. Lots of drink ideas, alcoholic and non, as well as interesting-looking recipes to try. Easy Peach Ice Cream, Slow Cooker Garlic Pork Chops, and 7-Up Carnitas were a few eye-catching offerings. (2)

But sometimes, it’s the artist’s earliest stuff that turns out to be their best. And this easy 7-Up Cake is a classic recipe that you’re going to love.
