Anti-Inflammatory, Anti-Cancer Borscht Recipe Made With Beets, ACV, Garlic (Serve Chilled or Hot)

Ahh beets. Honestly, beets are one of my favorite root vegetables. They are delicious and easy to prepare, can be used in so many different recipes (even desserts!) and best of all they are amazing for you. This vegetable definitely qualifies as a superfood and you should definitely include these little beauties in your diet if you pride yourself on living a healthy lifestyle.

4 Reasons Beets Can’t Be Beat

While beets have more to offer than just these four health benefits, these are some that I think most people may not have realized and be more reason to get them on the beet bandwagon.

High In Vitamins & Minerals

One of nature’s natural multivitamins, beets have the ability to shake you out of your funk and perk you back up. Beets are full of immune-boosting vitamins like vitamins A, B, and C. Not only that, but they’re packed with a ton of essential minerals like iron, folate, manganese, potassium, and copper. Try adding some beets or organic beet juice to your smoothies for a great health boost.

Packed With Antioxidants

What’s amazing about beets is not that they are high in antioxidants, but the unusual combination of antioxidants they contain. Most vegetables are packed with carotenoids – particularly beta-carotene, but beets contain the antioxidant betalain. That’s where they get their striking ruby red color from. The combination of betalain and vitamin C is what makes beets so amazing – and amazing for your eye and nerve tissue health especially!

Inflammation Fighters

Beets are packed with so many nutrients that it makes them one of the best foods to eat to reverse and help treat chronic inflammation. Inflammation under the right circumstances is actually very good for your body, and it is a way for your body to heal itself. But under the wrong circumstances, it can harm you. There are many diseases that are attached to chronic inflammation, including certain cardiovascular disease like atherosclerosis and even type-2 diabetes.

Detox Champion

Beets are also a great food to be eating if you want to help cleanse your body of toxins. The betalin in beets actually hooks onto these toxins and makes neutralizes them, making them water-soluble and easier for your body to dispose of them. Any way you consume the beets, you’ll get the benefit of a helping hand for your detoxing organs.

Borscht Recipe For Delicious Detox

This is one of my favorite ways to eat beets. You can roast them, eat them in salads, or by themselves as a side dish. But this detox soup recipe is un-beet-able!

Ingredients

  • 3 tbsp Apple Cider Vinegar
  • 2 cups Beets
  • 1/4 tsp Black Pepper
  • 2 cups Cabbage (cooked)
  • 4 whole Carrots
  • 3/4 cups Dill
  • 1 whole Potato*
  • 1/4 tsp Himalayan Mountain Salt (Mineral Salt)
  • 2 tbsp Sunflower Oil
  • 1/2 cup Yellow Onion
  • 2 Garlic Cloves
  • Garnish with Parsley
  • Salt to taste
  • (Sauerkraut can be substituted for cabbage and apple cider vinegar.)

Directions

  1. Start by chopping your onions, potatoes, carrots, beets, and cabbage thinly. I found a mandolin is great for this, and a lot easier.
  2. Throw them all into a pot and cover full with water.
  3. Bring the water to a boil, then turn it down to a simmer, keeping the pot covered for 1 hour.
  4. Blend the finished product for a ruby red soup and enjoy!

Beets are definitely a friend to those on the holistic path to good health and something you should enjoy often!
