Whether you’re a hard-working professional, a struggling student, or your family’s favorite cook, meals that are fast and delicious are important to you. Not only that, you probably don’t want to spend too much time in the grocery store tracking down expensive ingredients you’ll only use once. With this simple chicken, spinach, and mushroom oven bake that takes just over an hour to make, you’ll have checked every box needed for a heart-healthy meal that everyone will be raving about!

Spinach isn’t just Popeye’s favorite snack—it’s high in iron, with a ton of awesome benefits you may not have known about. This leafy veggie is also rich in nutrients such as potassium and Vitamin A, and has been said to help with heart diseases and asthma, as well as diabetes. (1)

Chicken also has properties linked to fighting cancer and heart disease—selenium. It is also a very low-fat source of protein. There are a few tricks you can do to make it even better for your health. Choosing skinless chicken breasts and baking it—as we’ll do in this recipe—lowers its fat content even more. So strap in, and chow down! (2)

Ingredients

  • 6 thin-sliced chicken breasts, thawed
  • 1 large package sliced mushrooms
  • 1 container green onion cream cheese
  • 1/4 cup olive oil
  • 1 dash Weber Herb and Garlic Seasoning
  • 1 dash pepper
  • 1/2 cup chicken broth
  • 1 small bag fresh baby spinach
  • 8 oz shredded mozzarella cheese
  • 9” x 13” baking pan
  • Tinfoil

Be sure to refer to the baking notes at the end of each applicable step for the best results!

Directions

  1. Take your cream cheese out of the refrigerator to allow time for it to soften.
  2. Thinly slice your chicken breasts, if they aren’t pre-sliced. The same goes for your mushrooms. *Note: make sure your chicken is thoroughly thawed, to prevent excess liquid in your bake.
  3. Preheat the oven to 375°
  4. Whisk together your chicken broth, cream cheese, and olive oil, until it reaches a uniform consistency. Set aside.
  5. Take your baking dish and lay your chicken slices in a single layer across the bottom.
  6. Add your spinach and mushrooms in another layer over top. *Note: try to keep them evenly distributed for consistent bites, but other than that, there’s no need to worry about being neat about it. Just toss them in!
  7. Dust with your seasonings, to taste.
  8. Take the cream cheese, olive oil, and broth mixture from earlier and pour it over the ingredients in the pan.
  9. Take a piece of tinfoil and cover the bake. *Note: do not press the tinfoil down! Let it rest gently over the ingredients.
  10. Bake for twenty (20) minutes, then remove foil from bake. *Note: We recommend you remove the bake from the oven during this step, to ensure you don’t get burnt.
  11. With the foil removed, bake your dish for twenty (20) to twenty-five (25) more minutes, before adding the mozzarella cheese. *Note: remove the bake from the oven here, too.
  12. Continue baking until the cheese begins to brown. This should take about ten minutes or so.
  13. Remove dish from oven and let stand for ten (10) minutes.

Serve and enjoy!
