Bacon Cheese Jalapeño Quick Bread Recipe

I became addicted to the jalapeño cheese bread at one of my local grocery stores a few years ago. It has more of a biscuit consistency like a quick bread — light yet dense and packed with so much cheese and jalapeños the flavors come through loud and clear. It’s not too spicy either. It makes an excellent choice for toast with chili, but I can eat it on its own slathered in butter fresh from the bakery or use thick slices for killer sandwiches. Of course, my diet doesn’t allow for this treat every day, so it’s also my go-to bread on cheat days! What drives me crazy though is that it’s considered a specialty bread at the bakery. So they don’t make it every day, and the days they do make it, it goes fast. That’s why I was thrilled to discover this Bacon Cheese Jalapeño Quick Bread recipe because it’s not only very close to the bread I love, but it’s actually even better because it adds the smokey flavor of bacon.

Simple Bacon Cheese Jalapeño Quick Bread Recipe

I am not a bread kind of gal when it comes to my cooking repertoire. In fact, I’m kind of scared of baking bread. However, this bread recipe tosses my fears aside for two reasons: 1) It’s worth the effort and 2) It’s what I would call fail-proof since it doesn’t use yeast. In case you didn’t know, yeast is a raising agent. It can be difficult to manage because the “proofing” stages that allow the bread to rise can make or break how well your bread turns out. I’m a huge fan of yeasty breads, but I’m just not blessed with bread baking skills.

This Bacon Cheese Jalapeño Bread recipe has everything you need for a knockout loaf of bread sans the stress and packed with the comforting tastes of home.

List of Ingredients

  • 12-14 slices of quality cooked, crumbled bacon such as applewood smoked
  • 3 cups flour
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 4 oz cream cheese at room temperature
  • 2 cups shredded cheese (here you can get creative by mixing your favorite cheese such as Monterey Jack and sharp cheddar, freshly grated parmesan, mozzarella, etc.)
  • 2 diced jalapeños seeds removed
  • 2 thinly sliced scallions (optional)
  • 1 egg
  • 1 1/2 cups whole milk
  • 1 tablespoon melted butter

Preparation and Baking Instructions

  1. Preheat oven to 350 degrees.
  2. Grease a 9 x 5 or 9 x 6 loaf pan.
  3. Cook your bacon until it is nice and crisp. Remove from pan and place on a paper towel to remove excess grease. Allow the bacon to cool and then crumble it.
  4. Whisk the flour, salt, baking powder, and sugar together in a small bowl. Set aside.
  5. Mix the cream cheese, shredded cheese(s), jalapeños, scallions, and bacon in a large bowl until evenly combined.
  6. Add your flour mixture to the cheese mixture along with the egg, milk, and melted butter. Mix just until combined.
  7. Add to your greased loaf pan and bake for 45-50 minutes or until a toothpick inserted comes out mostly dry.

My family gobbles this bread down as soon as it’s cool enough to slice. You might want to bake two loaves just to be safe!
