I have had a lifelong disdain for avocados, why I don’t know. I just have never liked them until this past year now I can’t stop eating them. I came up with this recipe on a Friday, you know that day right before grocery shopping day when you open the fridge and you have 4 items left – none of which look edible. Well, I happened to have an avocado, fresh dill and some veganaise in the fridge, so that was the base for my avocado dip. Necessity is the mother of all inventions…and dips!
Simple Avocado Dill Dip
Ingredients:
3 whole avocados
1 package or bunch of fresh dill
1 tablespoon of veganaise or alternative mayonnaise
1 teaspoon onion powder
*I personally don’t bother with a food processor but if you find it easier, then feel free.
Instructions:
- Remove meat from all 3 avocados place in a bowl
- Finely chop dill – approximately 1/4 cup
- Mash avocados using a fork
- Add 1 tablespoon of veganaise to avocado and mix well
- Add onion powder
- Add dill
- Mix well
That’s it! Really, you will find this to be one of the best-tasting dips you have ever had. Grab your favorite veggies: carrot sticks, cucumber slices, bell peppers, jicama, celery sticks, or whatever else your heart desires and get to dipping!
