Almond Butter Fudgy Bites

When I was younger my family always took summer trip to Wisconsin Dells, which is the largest outdoor (and now also indoor) attraction center in Wisconsin. Whether or not this is true, it’s known as “The Waterpark Capital of the World.” (1) However, what I know is true is that it’s such an awesome place to visit any time of the year with many different attractions to choose from.

One of the things that I always craved whenever I visiting the Dells is their well-known and popular fresh, creamy, and rich fudge! There is a section downtown where all the old time shops are located and several fudge shops. I remember the smell and watching workers making fresh fudge through the window. I would tag at my mom’s shirt and say, “I want some!!!” As always, I did get some…dark chocolate, maple walnut, peanut butter swirl, milk chocolate, and so on…

Now that I’ve no longer follow the Standard American Diet (SAD), I no longer purchase those kinds of fudge. Once in a while I would get a craving for some kind of fudge, but always look for healthier options. I had this craving again recently…a craving for some kind of nut butter fudge, which led me to this recipe.

It’s very peanut-buttery, rich, and a much healthier alternative to the SAD type fudge! As always, any sweets, raw or not, it’s good to consume in moderation. Live it out! Enjoy! And try out this healthier fudge alternative. Soon, I’ll be coming up with some kind of ooey gooey chocolaty fudge… But for now, this will do!

Almond Butter Fudgy Bites

Ingredients
  1. Fudge
  2. 1 1/2 cups creamy almond butter
  3. 1 cup coconut butter
  4. 1/8 cup raw organic honey
  5. 1 tsp vanilla extract
  6. Cacao Drizzle
  7. 1 tbsp coconut oil
  8. 2 tbsp cacao powder
  9. 1 tsp raw organic honey
Instructions / Directions / Method
  1. Fudge
  2. In a medium bowl, bring together the coconut butter, almond butter (or nut butter of choice), honey, and vanilla extract.
  3. With a spoon, mix until it’s well incorporated
  4. In a 9 x 12 inch pan, line the bottom with Saran wrap to prevent sticking.
  5. Pour the fudge in the pan. Shake and spread it evenly.
  6. Reserve the fudge in the freezer until it hardens (about 30 minutes to an hour).
  7. Cacao Drizzle
  8. Mix together the melted coconut oil, cacao powder, and honey (or sweetener of your choice).
  9. Take the fudge out of the freezer and drizzle the cacao over it.
  10. Return the fudge back in the freezer to allow the drizzle to set for about 15 minutes or so.
  11. Cutting & Storing
  12. Carefully remove the fudge from the pan (using the Saran wrap to help pull the fudge from the pan).
  13. Invert the baking pan and place the fudge (with Saran wrap still on) on top.
  14. Cut the fudge to the desired size and store in a sealable container.
  15. Option 1: Store the fudge in the refrigerator and serve.
  16. Option 2: Store the fudge in the freezer (it thaws quickly) and grab whenever you want one.
  17. Option 3: Since there is a lot, you can store half in the freezer and half in the refrigerator.
  18. ENJOY!
    Kitchen Tools / Equipment Needed
    1. Blender
    2. Food Processor
    Alternatives / Replacements
    1. You may replace almond butter with other nut butter of your choice.
    2. You may purchase ready-made coconut butter, if preferred. (But I find it cheaper to make your own.)
    3. You may use any sweetener as desired. (I used raw honey in this recipe because that is what I had on hand at the moment.)
